Lamb's lettuce with bacon and pine nuts

Ingredients for 2 servings:

  • 2 handfuls of lamb’s lettuce
  • 6 cherry tomatoes
  • 2 tbsp pine nuts
  • 2 tbsp bacon
  • olive oil
  • Balsamic vinegar
  • salt and pepper
  • 1 pinch(s) of sugar
  • 1 tsp mustard
  • 1 tsp herbs de Provence

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Divide the lamb’s lettuce between two plates and arrange the halved cocktail tomatoes on top. Toast the pine nuts without fat until they’re nicely browned, then fry the bacon. For the dressing, mix together olive oil, balsamic vinegar, salt and pepper, a pinch of sugar, a teaspoon of mustard, and 1 teaspoon of Provençal herbs. Drizzle the dressing over the salad and sprinkle with bacon and pine nuts.
