Ingredients for 1 servings:

  • 500 g sugar
  • 150 g butter
  • 12 g cinnamon
  • 1 vanilla pod(s), including the pulp
  • 2 kg apples, sour

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes

Caramelize the sugar until light brown. Add the butter cubes, cinnamon, and the scraped vanilla seeds. Once the butter is completely melted, pour onto baking paper and let it harden. Break into pieces and chill in the freezer. Grind in batches in an electric coffee grinder to a powder. Peel the apples and slice or slice into thin strips. Line a baking dish with 10-15 staggered layers of apple slices. The total thickness should be about five centimeters. Sprinkle each layer, and finally the top layer, generously with caramelized sugar. Bake in an oven preheated to 180°C (top/bottom heat) for about half an hour until soft. Cut out portions using a serving ring. Can be served on its own or as a side dish with almost any ice cream flavor. Makes about 8 pieces.
