Baked apple with amaretto, raisin and almond filling

Ingredients for 4 servings:

  • 4 apples (Boskoop)
  • 200 ml Amaretto
  • 100 g raisins
  • 100 g ground almonds
  • 1 tsp cinnamon
  • some butter
  • some sugar

Instructions

Working time approx. 30 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 30 minutes

Mix the ground almonds with the raisins, cinnamon, and 150 ml of Amaretto and let them soak for about 2-3 hours. Core the apples with a corer. Place the apples in a greased dish. Fill the apples with the almond mixture and cover with a pinch of butter. Pour in the remaining Amaretto and bake in an oven preheated to 175°C (350°F) for about 30-40 minutes (depending on the size of the apple). Ensure there is always some liquid in the dish. Sprinkle with cinnamon sugar just before serving. Serve with vanilla sauce or, for something really sweet, chocolate sauce. For children, simply replace the Amaretto with Kinderpunsch (children’s punch).
