Chicken breast in Thousand Island sauce

Ingredients for 8 servings:

  • 3 packs of frozen chicken breast fillet(s)
  • 2 cups of cream
  • 2 cups sour cream
  • 3 m.-sized onion(s)
  • 500 g mushrooms
  • 1 bottle of sauce (Thousand Island Sauce)
  • 1 jar cranberries
  • pepper
  • Paprika powder
  • dill
  • Salt

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Thaw the chicken breast fillets. Pat dry, place in a casserole dish, and season with salt and pepper. Peel the onions and slice them into rings, trim the mushrooms and thinly slice them. Sauté both vigorously in a heated pan, let them cool slightly, and pour them over the chicken breast fillets. Mix the cream and sour cream together. Season to taste with dill, salt, pepper, and paprika and pour the mixture over the chicken breast fillets. Now pour the Thousand Island sauce over the casserole and scatter the cranberries on top. Cover the casserole with aluminum foil. Bake in a preheated oven at 200°C for about 1 hour. Remove the aluminum foil after about 30 minutes. Almost anything goes well with this dish, including rice, croquettes, or baguette. Tips: I usually only use 1/2 jar of cranberries so the casserole isn’t quite as sweet. For 12 people, you can replace the chicken breast fillet with 3 kg of turkey schnitzel. Then take 3 cups of cream, 4 cups of sour cream and 2 bottles of sauce.
