Plum and licorice spread

Ingredients for 2 servings:

  • 500 g plum(s), ripe, e.g. Bühler plums
  • 150 g liquorice, soft
  • 1 lemon(s), juice
  • 250 g gelling sugar 2:1
  • 1 bag of vanilla sugar or the pulp of half a scraped vanilla pod

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Wash the plums, halve, pit, and cut into eighths. Mix them with the licorice and gelling sugar in a saucepan. Heat on the stovetop and simmer over low heat for about 25-30 minutes. Place a fine mesh sieve over a second saucepan and strain the fruit mixture through the sieve. Stir in the lemon juice and vanilla sugar or vanilla seeds and bring to a boil. Then pour into prepared twist-off jars and seal tightly. If you prefer a stronger licorice flavor, use 200g of licorice.
