Pear jam with ginger and thyme

Ingredients for 3 servings:

  • 500 g pear(s), ripe
  • 10 g ginger, freshly grated, approx. 20 – 25 g buy
  • 1 tbsp thyme leaves, fresh
  • 2 tbsp lemon juice, freshly squeezed
  • 250 g gelling sugar 2:1

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 3 minutes; Total time approx. 38 minutes

Finally, prepare the pears. First, peel the fresh ginger (it’s best to scrape off the skin with a small spoon) and then finely grate about 10g. Remove the thyme leaves from the stem. Set aside a good tablespoon of the leaves. Freshly squeeze the lemon. Peel the pears, thoroughly remove the cores, and cut into small pieces. Immediately mix with the preserving sugar and lemon juice. Purée the mixture; however, the jam can be left completely chunky or puréed, depending on your taste. Add the ginger and thyme, and then reduce according to the preserving sugar instructions. Note: The quantities of the ingredients can be varied according to taste.
