Banana-Mango-Mascarpone Dessert

Ingredients for 4 servings:

  • 4 tbsp coconut chips
  • 1 small can of mango(s) (125 g)
  • 2 bananas
  • 2 tbsp lemon juice
  • 2 cups of yoghurt (mango yoghurt) of 150 g each
  • 1 cup mascarpone (250 g)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Briefly toast the coconut chips in a non-stick pan without adding any fat until they begin to smell, then remove immediately. Drain the mangoes and chop them. Peel and slice the bananas, and drizzle with lemon juice. Mix the mango yogurt with the mascarpone until creamy. Layer the mascarpone cream, mango pieces, banana slices, and toasted coconut chips alternately in tall dessert glasses and refrigerate until ready to serve.
