Paros white bread with oat flakes

Ingredients for 1 servings:

  • 750 g wheat flour, type 550
  • 250 g oats, finely ground
  • 1 cube of yeast
  • 500 ml buttermilk
  • 2 tsp salt
  • 1 tsp honey or sugar
  • 1 egg(s)
  • 75 g yogurt
  • possibly sunflower seeds

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour 35 minutes; Cooking/baking time approx. 1 hour 5 minutes; Total time approx. 2 hours 55 minutes

Dissolve the yeast in 200 ml of lukewarm buttermilk and let it stand for about 30 minutes. Mix the remaining buttermilk with the rolled oats and let it swell. If you like, you can also add sunflower seeds at this point. Then add the egg, yogurt, honey, salt and remaining flour to the rolled oats, add the dissolved yeast and knead into a smooth dough. Let it rise for 20 minutes. Knead the dough well again, place it in a baking dish and let it rise for about 45 minutes. Preheat the oven to 250 degrees Celsius. Brush the dough with a wet hand, score it and cover it with aluminum foil. Bake at 250 degrees Celsius for 10 minutes, then reduce the temperature to 200 degrees Celsius and bake for another 45 minutes. Then remove the aluminum foil and bake for a further 10 minutes. Total baking time approx. 65 minutes. This is a light and airy white bread, but thanks to the rolled oats it’s not quite as bland as, for example, toast.
