Baked apple and plum jam

Ingredients for 4 servings:

  • 700 g plums, pitted and quartered
  • 300 g apples, peeled, pitted, cut into small pieces
  • 50 g fir honey
  • 500 g gelling sugar (gelling raw cane sugar 2:1)
  • 1 lemon(s), the juice
  • 50 g raisins, soaked in Jamaican rum
  • 50 g almonds, chopped or slivered
  • 2 tsp gingerbread spice
  • 1 stalk(s) cinnamon

Instructions

Working time approx. 45 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 45 minutes

own creation

Combine plum and apple pieces with honey, lemon juice, and gelling raw cane sugar, and let it set overnight. Heat with the remaining ingredients while stirring and simmer for 3-5 minutes. Test for settling and add a little more lemon juice if necessary. Fill to the brim in hot, rinsed jars, seal tightly with twist-off lids, turn upside down, and let cool.
