Fruity with black currants

Mix the cleaned and washed currants with the finely chopped banana pieces. Mash about 2/3 of the currants with a food processor until smooth, then press the rest of the currants lightly to burst the berries. Boil the currants with the sugar and gelling powder according to the instructions. Just before the end of the cooking time, add about 2 cl of blackcurrant (optional). Skim the finished jam and pour into prepared jars. Secure with twist-off lids and turn the jars upside down while cooling. Makes about 4 jars of 200-250 ml of jam. Fruity, slightly sweet and sour flavor.
