Cream of Tomato Soup with Thermomix

The perfect cream of tomato soup with thermomix recipe with a picture and simple step-by-step instructions.

For the topping:

  • 1 Pc. Onion
  • 1 tbsp Olive oil
  • 800 g Chopped canned tomatoes
  • 60 g Tomato paste
  • 1 tsp Seasoned Salt
  • 1 tbsp Italian dried herbs
  • 400 g Water
  • 1 cube Vegetable broth
  • 1 tbsp Maple syrup
  • 100 g Sour cream, creme fraiche, sour cream, whipped cream
  • 1 Handful Basil leaves
  • 175 g Feta
  • 1 tbsp Honey
  • 50 g Pine nuts
  • 2 tbsp Fresh, chopped rosemary
  • Freshly ground pink pepper
  • 1 tbsp Olive oil
  1. Peel the garlic and onion and chop roughly in a mixing bowl with the olive oil for 3 seconds / speed 5. Braise for 3 minutes / Varoma / Level Now all the other ingredients except sour cream (or alternative), maple syrup and basil are added. Cook for 9 minutes / 100 degrees / level Then add the remaining ingredients and puree in stages, approx. 25 seconds / stage 5-7-8.

for the topping:

  1. Heat the olive oil in a pan. Add the rosemary and pine nuts. Roughly dice the feta and add it to the pan as well. Fry gently for a few minutes. Drizzle with the honey. Refine with pink pepper. Pour the topping over the prepared soup.
