Cream of Tomato Soup with Thermomix
The perfect cream of tomato soup with thermomix recipe with a picture and simple step-by-step instructions.
For the topping:
- 1 Pc. Onion
- 1 tbsp Olive oil
- 800 g Chopped canned tomatoes
- 60 g Tomato paste
- 1 tsp Seasoned Salt
- 1 tbsp Italian dried herbs
- 400 g Water
- 1 cube Vegetable broth
- 1 tbsp Maple syrup
- 100 g Sour cream, creme fraiche, sour cream, whipped cream
- 1 Handful Basil leaves
- 175 g Feta
- 1 tbsp Honey
- 50 g Pine nuts
- 2 tbsp Fresh, chopped rosemary
- Freshly ground pink pepper
- 1 tbsp Olive oil
- Peel the garlic and onion and chop roughly in a mixing bowl with the olive oil for 3 seconds / speed 5. Braise for 3 minutes / Varoma / Level Now all the other ingredients except sour cream (or alternative), maple syrup and basil are added. Cook for 9 minutes / 100 degrees / level Then add the remaining ingredients and puree in stages, approx. 25 seconds / stage 5-7-8.
for the topping:
- Heat the olive oil in a pan. Add the rosemary and pine nuts. Roughly dice the feta and add it to the pan as well. Fry gently for a few minutes. Drizzle with the honey. Refine with pink pepper. Pour the topping over the prepared soup.
