Ingredients for 8 servings:

  • 80 g butter
  • 8 slices of baguette
  • 16 slice(s) ham, raw
  • 40 g arugula
  • 8 eggs
  • Salt
  • pepper
  • chives

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Melt 40g butter in a pan. Fry the baguette slices on both sides until golden brown. Wash the arugula and dry thoroughly. Top the baguette slices with a few arugula leaves and top each with two slices of ham. Fry the eggs in the remaining butter, season with salt and pepper. Use a round cutter to scoop out the yolks, place them on the baguette slices, and garnish with chives.
