Honeydew melon dessert bites

Ingredients for 8 servings:

  • 1 honeydew melon(s)
  • e.g. sorbet (lemon sorbet)
  • e.g. fresh basil, chopped

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Could serve as part of a dessert buffet

Cut the honeydew melon long-side-down into 12 mm-thick rectangles to create two or more melon “slabs.” Thaw the lemon sorbet briefly and mix with the basil. Cover each melon slab with ice cream and cover with a second slab. Cut into bite-sized pieces or sandwich fingers, wrap in plastic wrap, and store in the freezer until ready to use.
