Ingredients for 1 servings:

  • 1 kg fruit (strawberries, apricots, rhubarb)
  • 1 kg gelling sugar, 1:1
  • 1 pack of citric acid

When it comes to fruit, make sure the strawberries make up about three-quarters of the mixture. Chop a few pieces of fruit into small pieces and set aside. Blend the remaining fruit, add sugar, and let stand overnight with the chopped fruit. The next day, let the mixture simmer for five minutes, stirring constantly (test for setting). Pour into hot, rinsed jars. Screw the lids shut and turn upside down for five minutes. This will allow you to 1) immediately see which jars are leaking, and 2) sterilize the entire jar.
