Berry gratin

Ingredients for 6 servings:

  • 2 egg yolks
  • 1 egg(s)
  • 50 g sugar
  • 2 cl alcohol, e.g. Grand Marnier, white port, ouzo…
  • 120 g cream
  • 500 g berries
  • ½ lemon(s)
  • e.g. pistachios, cress or mint, for decoration

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Place the egg yolks, egg, sugar, and alcohol in a suitable saucepan or metal mixing bowl and whisk over a bain-marie, first while hot, then while cold, over ice or cold water. Do not overwhip the cream. Carefully fold it into the egg foam mixture – using a spatula, not a whisk. Trim and wash the berries, then marinate them in the lemon juice. Arrange them on a plate, spread the gratin mixture on top, and gratinate either in the oven at around 200 degrees Celsius (400 degrees Fahrenheit) or over a gas burner. Decorate as desired, for example with chopped pistachios, cress, or mint. For an even more sophisticated finish, serve the gratin with a parfait.
