Stuffed baguette with chicken

Ingredients for 3 servings:

  • 4 baguette rolls, for baking
  • 2 chicken breast fillets
  • 1 egg(s)
  • 2 tbsp flour
  • 4 tbsp breadcrumbs
  • 8 slices of cheddar cheese
  • 2 tbsp Parmesan, grated
  • 2 tbsp parsley, chopped
  • 125 g butter
  • Clarified butter, for frying

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 5 minutes

Slice the chicken breast fillets, season, coat like schnitzel, and fry in clarified butter. Remove from the pan and let drain. In the meantime, preheat the oven to 175°C, cut the baguettes in half (but do not cut them open). Scrape out the insides with a spoon. Wrap each schnitzel in a slice of Cheddar cheese and place them in the hollowed-out baguette. Put the baguette halves back together and cut them again, making four pieces per baguette. Place the baguettes on a baking sheet lined with parchment paper. Melt the butter and stir in the parsley and Parmesan cheese. Now brush the baguettes with butter and place the sheet in the oven for 25 minutes. I secure the parchment paper over the baguettes with two paper clips to prevent them from getting too brown. You can also serve them with a salad.
