Banana and pineapple gratin

Ingredients for 2 servings:

  • 100 g pineapple pieces, drained (can)
  • 100 g banana(s), sliced
  • 2 tbsp brown sugar
  • 100 g coconut milk
  • 1 tbsp lemon juice
  • some biscuits (pastry rolls)

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Boil one tablespoon of brown sugar with one tablespoon of water in a saucepan and caramelize slightly. Deglaze with the coconut milk and reduce slightly. Add the pineapple chunks, banana slices, and lemon juice. Simmer for one minute. Divide between two small cocottes. Place the pastry rolls on top and sprinkle with a spoonful of brown sugar. Bake in a preheated oven at 180°C (top/bottom heat) for a few minutes until the pastry rolls are lightly browned. Serve while still warm.
