Ingredients for 4 servings:
- 250 g flour
- 60 ml carbonated mineral water
- 60 ml milk
- 1 tsp salt
- 500 g lard
- Flour for the work surface
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes
In a large bowl, mix the flour with the salt. Add the cold water and cold milk. Mix briefly with a fork. Add 20g of lard and knead vigorously with your hands until you have a ball of dough. Place the dough on a lightly floured surface and knead until smooth and elastic. Then roll out to a thickness of 2-3mm. Use a pastry wheel to cut more or less equal-sized rectangles. You will need about 25 pieces. Heat the remaining lard in a pan. When the lard is very hot, deep-fry the rectangles one after the other. Each side for about 1 minute. Remove from the pan and place on kitchen paper. Serve with ham, salami and/or cheese. Ideally, serve while still warm.
