Carrot-mango jam

Ingredients for 1 servings:

  • 650 ml carrot juice
  • 2 carrots
  • 1 ½ organic lemon(s)
  • 2 mangoes
  • 2 packs of gelling sugar 2:1

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Peel, core, and dice the mango. Peel and dice the carrots. Then place the diced carrots in a large pot. Add the carrot juice. Squeeze the lemons, add the juice, and cook until soft. Then puree and add gelling sugar (you may need to reduce the sugar if you prefer a different consistency). Bring everything to a boil according to the package instructions, test for settling, and pour into prepared, sterile jars.
