Herb pickled eggs

Ingredients for 5 servings:

  • 10 eggs
  • ½ liter vinegar (white wine vinegar)
  • ½ liter of water
  • 2 shallots, halved
  • 1 chili pepper(s)
  • 2 garlic cloves
  • 1 tsp thyme
  • 1 tsp rosemary
  • 2 sprig(s) fresh herbs, of your choice
  • 3 tbsp salt

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Boil the eggs hard. Then let them cool. Crack the shells open all around and place them in a large, sealable jar. Bring all the other ingredients except the fresh herbs to a boil, then let them cool and pour over the eggs. Add the fresh herbs, seal the jar, and let the mixture steep for at least 8 days before serving.
