  • 500 g Wheat flour 812 (alternatively wheat flour 550)
  • 10 gr Salt
  • 15 g Fresh yeast
  • 150 ml Milk lukewarm
  • 150 ml Lukewarm water
  1. Put all ingredients one after the other in a mixing bowl / food processor and knead for about 10 minutes. Then cover the dough and place in a warm place and let REST for about 30 minutes. After RISING, divide the dough into several pieces.
  2. Weigh out the pieces of dough (approx. 95 grams – 8 pieces) for the baking pan and shape them (for the baking tray approx. 70 grams – 12 pieces). Either place on a baking sheet or put in a greased baking pan. Cover and let RISE again, about 20 minutes. In the meantime, preheat the oven to 210 ° degrees top / bottom heat or to 190 ° degrees circulating air.
  3. After the second GOING, use a sharp knife to cut into the dough pieces and lightly flour them. Now slide the baking sheet or baking pan into the preheated oven and bake for about 20 to 25 minutes.
