Delicious – airy rolls

Ingredients for 1 servings:

  • 1,200 g flour of your choice (e.g. wheat flour, type 405 or 550, spelt flour type 630 or similar)
  • 42 g yeast or 2 sachets of dry yeast
  • 25 g salt
  • 800 ml water
  • some water for brushing
  • possibly seeds, various or cheese

Dissolve the yeast in 300 ml of warm water. Mix the flour and salt, add the dissolved yeast and 500 ml of warm water. It is best to knead it first with the dough hook of a hand mixer and then knead it thoroughly by hand. Divide the dough into approximately 16 portions (approx. 120 g each), form rolls from them and place them on a baking sheet lined with baking paper. Leave plenty of space between the rolls, as they rise a lot. Let them rise, covered, for approximately 1-1.5 hours. It is best to cover them with a kitchen towel and place them in the oven, which you warm up briefly to create a warm environment and allow the yeast to rise better. Then brush the rolls with water, sprinkle with seeds or cheese if desired, and score them with a sharp knife about 1-2 cm. Now bake the rolls at approx. 175°C fan/convection oven for approximately 20-25 minutes. Depending on the oven. I have a gas stove and baked the rolls on level 6-7.
