Marinated herring with yogurt

Ingredients for 2 servings:

  • 250 g herring fillet(s)
  • 2 medium-sized onions, approx. 115 g
  • 300 g yogurt
  • 125 ml cooking cream, 7% fat
  • 100 g gherkins, e.g. cornichons
  • 1 apple, approx. 75 g
  • 1 bunch of herbs, e.g. dill

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Cut the fish fillets into bite-sized pieces. Quarter the onions and slice them into rings, not too thick. This will help distribute the onions evenly in the marinade. Also finely chop the gherkins and peeled apple, dicing the apple very finely. Mix everything in a bowl with the yogurt and cooking cream. If the mixture is too thick, add a little pickle juice. Finally, add the chopped herbs. (I take the easy way out and use frozen herbs.) Be careful with the dill, though, so it doesn’t overpower the flavor. Place everything in the refrigerator or another cool place for about an hour to allow everything to marinate. Approx. 535 kcal per serving.
