One Pot Vegetable Rice from the Electric Pressure Cooker

Ingredients for 2 servings:

  • 2 cups basmati rice
  • 3 m.-sized carrot(s)
  • 1 bell pepper(s), red
  • 3 spring onions
  • 3 cups of water
  • 1 tsp, heaped vegetable paste (vegetable-herb-seasoning paste)
  • curry powder
  • salt and pepper
  • e.g. parsley

The “cup” refers to the measuring cup included with the pot. This holds approximately 140 ml. You can find a recipe for vegetable and herb seasoning paste in my recipes, among others. As an alternative to the seasoning paste, you can also stir some stock powder into the water. Cut the vegetables into bite-sized pieces and slice the spring onions into rings. Place the rice in the multicooker, add the water and seasoning paste, and stir well. Ensure that all rice grains are covered. Sprinkle the chopped vegetables evenly over the rice. Close the lid and the vent. Set the rice program for 1-3 cups, for a duration of 5 minutes plus the preheating time. When the cooking process is finished, turn off the multicooker and slowly release the steam. Season the rice with curry, salt, and pepper. If you like, you can also sprinkle on some chopped parsley. This recipe serves 2 people as a main course or 4 people as a side dish, for example, with fish.
