Baked cheese potatoes

Ingredients for 4 servings:

  • 5 potatoes, 125 g each
  • 1 tbsp salt
  • 1 tbsp caraway seeds
  • 1 onion(s)
  • 50 g bacon, average
  • 3 tbsp butter
  • 250 g mushrooms
  • 4 tbsp parsley
  • 1 egg(s)
  • 100 g cheese, grated

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Cook the potatoes in salted water with caraway seeds, rinse with cold water, and let them evaporate. Halve the potatoes lengthwise, scoop out 1 tablespoon of the center of each, and chop finely. Peel and dice the onion. Dice the bacon and fry until crispy. Add 1 tablespoon of butter and the onion and sauté until golden. Cut the mushrooms into small pieces and fry for 2 minutes. Stir in the parsley. Mix the potatoes, mushrooms, egg, and cheese, and season with a little salt and pepper. Distribute evenly among the potatoes, mounding them up and pressing them down. Grease a baking tray, place the potatoes on it, dot with knobs of butter, and bake in the oven at 200°C for 10 minutes.
