Tomato – mozzarella – salad with shrimp

Ingredients for 2 servings:

  • 4 large tomatoes
  • 250g mozzarella
  • 2 tbsp olive oil
  • 2 tsp mixed herbs
  • 2 tsp balsamic vinegar
  • some salt and pepper, black from the mill
  • 20 shrimp(s), pickled (garlic and herb shrimp)

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Wash the tomatoes, remove the stems, and slice them. Drain the mozzarella and slice them as well. Arrange the tomato slices on two plates, place the mozzarella slices on top, and drizzle with a little olive oil. Season with the herb mixture, balsamic vinegar, salt, and pepper. Quickly heat the shrimp in a pan, spread them on the tomato and mozzarella salad, and serve immediately. A summer favorite! Serve with oven-fresh baguette. I’ve also served it with spaghetti.
