Ingredients for 1 servings:

  • 5 kg plum(s) (pitted and halved)
  • 1 kg sugar
  • 1 pack of gingerbread spice
  • 1 bar of block chocolate
  • 1 walnut, one unripe green

Instructions

Working time approx. 30 minutes; Rest period approx. 1 day; Cooking/baking time approx. 5 hours; Total time approx. 1 day 5 hours 30 minutes

Oven method, with chocolate

Mix the prepared plums with the sugar and let stand overnight. Empty the plums into a large roasting pan, add the gingerbread spice, crushed chocolate, and the walnuts, and mix well. Place the lid on the roasting pan and place it in the oven preheated to 250°C. After about 2-3 hours, reduce the oven temperature to 200°C and continue simmering. Do not stir during this time (at most, loosen the rim). When the jam is ready after 4-5 hours, briefly stir with the whisk of a hand mixer and immediately pour into prepared, clean twist-off jars. Close the jars and let them cool upside down. The jam is ready when you can draw a “road” through the jam with a wooden spoon. Be careful not to let it reduce too much; it will thicken further as it cools!
