Strawberry-banana jam

Ingredients for 1 servings:

  • 500 g strawberries, washed, chopped
  • 500 g banana(s), fully ripe, peeled, chopped
  • 2 tsp, heaped citric acid
  • 1 piece(s) vanilla pod(s), scraped
  • 1 kg gelling sugar, 1:1

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 4 minutes; Total time approx. 2 hours 34 minutes

with a light vanilla note

Wash and chop the strawberries. Peel and chop the ripe bananas. Place them all in a saucepan and mix well with the scraped vanilla pod, the seeds of the vanilla pod, the citric acid and the sugar. Cover and leave to stand for 2 hours to allow the fruit to release its juices. Then remove the vanilla pod and puree everything thoroughly with a hand blender. Add the vanilla pod back in and bring to the boil while stirring. Important – the mixture must be stirred constantly, otherwise it will burn!!! Boil for 4 minutes according to the package instructions. After the cooking time, remove the vanilla pod. Then pour into well-cleaned jars with twist-off lids, close and turn upside down for 5 minutes. I use 1:1 gelling sugar as this sugar contains no preservatives!
