First things first: The pears should be small and firm. Peel the pears. Split the vanilla pod and scrape out the vanilla seeds. Bring the water, lemon juice, honey, and vanilla seeds to a boil. Place the pears in an ovenproof dish and pour the boiled liquid over them. Bake in a preheated oven at 180°C fan/convection oven (200°C top/bottom heat) for about half an hour until soft, allowing the liquid to caramelize. Pour the liquid over the pears occasionally during baking. If the liquid reduces too much, add a little water. Tastes great with vanilla ice cream. Tips: If the sauce isn’t enough for you, you can remove the pears from their skins, add honey, a little lemon juice, and water, whisk together, and heat again. Ladyfingers, added to the baking dish shortly before, also make a delicious accompaniment.
