Ingredients for 1 servings:

  • 500 g pumpkin(s)
  • 1 can peach(s)
  • 1 pack of citric acid
  • 1 tsp lemon juice
  • 2 cl rum
  • 500 g gelling sugar (2:1)

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Cut the pumpkin into small pieces and cook with the peach juice until soft. Cook gently, otherwise the pumpkin will stick; stir constantly. Combine the pumpkin, fruit, and gelling sugar, add the remaining ingredients, stir again, and cook for at least 3 minutes (see gelling sugar instructions). While still hot, pour into prepared jars and seal tightly.
