Spicy chicken salad

Ingredients for 4 servings:

  • 400 g chicken, fried, cut into small pieces
  • 2 medium-sized eggs, boiled, sliced
  • 1 tbsp capers, finely chopped
  • 3 anchovy fillets, finely chopped (or equivalent paste)
  • 1 medium-sized onion(s), finely diced
  • 2 m.-sized gherkins or pepper gherkins, thinly sliced
  • 1 tbsp mustard
  • 3 tbsp oil
  • e.g. salt and pepper
  • n. B. sugar
  • n. B. vinegar

Instructions

Working time approx. 20 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 8 minutes; Total time approx. 3 hours 28 minutes

Mix together a salad dressing from mustard, oil, a little vinegar, some sugar, salt, and pepper. Stir in the onion, anchovies, capers, and chicken. Let it marinate well (about 3 hours). Finally, stir in thin slices of gherkin and slices of boiled egg. Serve with toast and butter.
