Tomato squid sauce

Ingredients for 4 servings:

  • 200 g octopus (squid), pickled, can
  • 3 tomatoes
  • 1 large onion(s)
  • 1 clove(s) garlic
  • 150 g tomato paste
  • 100 g feta cheese
  • 100 ml white wine
  • 1 dashes lemon juice
  • oregano
  • basil
  • rosemary
  • Paprika powder

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Goes perfectly with pasta

Dice the onion and tomato, and slice the garlic. Sauté the onion and garlic in oil in a pan until the onions are translucent. Deglaze with the wine and reduce the heat. Add the tomatoes and tomato paste and top up with water until the sauce is slightly thinner than desired. Crumble the feta into the sauce, add the squid, and season with lemon juice and the spices. I made the recipe again with mussels because I couldn’t find squid outside of a supermarket chain’s Spain week. I personally don’t like it quite as much, so I recommend using squid/polyp or octopus whenever possible.
