Curd dumplings with chocolate center

Ingredients for 5 servings:

  • 250 g low-fat curd cheese, possibly a higher fat content
  • 70 g toast bread without crust, finely grated
  • 1 egg(s)
  • 20 g sugar
  • 10 g butter, melted
  • some vanilla powder or vanilla pulp or vanilla extract
  • 50 g cream
  • 35 g dark chocolate
  • 1 tbsp sugar
  • 40 g breadcrumbs or toast, finely grated
  • 30 g butter

Instructions

Working time approx. 45 minutes; Rest time approx. 2 hours 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 3 hours 25 minutes

Drain the quark in a tea towel. Remove the crust from the toast and grate it very finely. Mix the drained quark (about 170 g left) with the egg, sugar, and melted butter, then stir in the grated toast and add the vanilla. Refrigerate the mixture for at least 1 hour. However, you can also prepare it in the morning and make dumplings the evening before. For the filling, bring the cream to a boil, add the chocolate, melt it, and stir until smooth. Let it set in the refrigerator for 1 hour. Then form 5 balls from the semi-solid cream and freeze them. Form 5 equal-sized dumplings from the quark dough and place a frozen chocolate ball in each one. Carefully place the dumplings in simmering, but not boiling, water and let them stand for 8-10 minutes. Meanwhile, melt the butter in a small pan, add the breadcrumbs and sugar, and lightly brown the crumbs over medium heat. Carefully remove the finished curd dumplings from the water with a slotted spoon, roll them in the breadcrumbs, and serve while still warm. Alternatively, the dumplings can be served plain or filled with regular nougat or fruit.
