Ingredients for 2 servings:
- 2 rolls
- 2 small onions
- 2 garlic cloves
- 250 g mushrooms
- ½ bunch chives
- 1 tbsp butter
- salt and pepper
- 2 eggs
- 1 bowl of aioli for serving

For a little snack between meals…
Halve the rolls, using only the top half of each. Finely chop the onions and garlic. Clean the mushrooms and trim the bottom end of the stem. First slice the mushrooms and then roughly chop them. Heat the butter in a pan and fry the mushrooms, onions, and garlic until hot and crispy. Finely chop the chives and add them. Toss everything in the hot butter and season with salt and pepper. Then divide them between the two roll halves. Fry two fried eggs in the still-greasy pan and place them on top of the mushroom mixture. Serve everything with a bowl of aioli, which can be bought or made at home.
