Apricot yogurt ice cream

Ingredients for 4 servings:

  • 300 apricots, ripe
  • 150 g sugar
  • 360 g natural yogurt (cream yogurt or Greek yogurt)
  • 250 ml cream
  • 2 tbsp rose water

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Halve the apricots and remove the stones. Finely dice the apricots and mix them with the sugar in a pan. Bring to a boil and cook, stirring continuously, until the mixture becomes a purée. Puree the apricots in a blender or with an immersion blender, then let cool completely. Mix the plain yogurt with the apricot puree and cream and flavor with rose water. Freeze the mixture in an ice cream maker.
