Ingredients for 2 servings:
- 30 g lemon balm
- 3 tsp sugar
- 20 drops of lemon juice
- 30 g almond(s), peeled or slivered
- 2 scoops of ice cream (vanilla)
- 150 g strawberries
- 1 tsp olive oil

Vanilla ice cream with strawberries and lemon balm and almond pesto
For the pesto, wash and finely chop the lemon balm, then mix it with the almonds in a food processor until finely ground. Add the sugar, olive oil, and lemon juice. Mix everything together and chill. Serve with one scoop of vanilla ice cream per person. Serve washed and sliced strawberries, sugared to taste, with ice cream and sweet pesto, and garnish with a sprig of lemon balm.
