Ingredients for 10 servings:

  • 200 g almond(s), roasted (ready-made or home-roasted)
  • 4 eggs
  • 100 g sugar
  • 1 packet of vanilla sugar
  • 100 ml orange juice
  • 1 cup cream, nB more
  • n. B. cream stiffener

A dreamy parfait – not just for the Christmas season!

Whisk the eggs, sugar, vanilla sugar, and orange juice in a stainless steel bowl over a simmering pan of water until frothy and white. Do not allow to get too hot! Then whisk over a simmering pan of cold water until cold and set aside. Now whip the cream to stiff peaks. Depending on your desired calorie content and quantity, you can use 1 or 2 cups of cream. If this is too slow for you, you can add a cream stiffener, but it is not necessary. Put the almonds in a freezer bag, seal it well to remove any air, and pound them on a board with a meat mallet. Depending on the desired size of the pieces, fold the cream and almond pieces into the egg mixture and pour into a loaf pan lined with cling film. Frozen overnight: Serve the parfait sliced ​​on a fruit plate or simply next to a slice of orange with a few roasted almonds.
