Fiery pepper and cucumber salad

Ingredients for 2 servings:

  • 2 bell peppers
  • 1 cucumber(s)
  • 2 chili peppers, red
  • 1 onion(s)
  • 1 garlic clove(s)
  • 2 sausages (Debreziner)
  • 1 lemon(s)
  • olive oil
  • Balsamic vinegar
  • salt and pepper
  • 2 tbsp parsley, chopped

Instructions

Working time approx. 15 minutes; Rest time approx. 1 day 6 hours; Total time approx. 1 day 6 hours 15 minutes

Chop the bell peppers, cucumber, chili peppers, sausages, and onion into small pieces (remove the seeds from the cucumber first, otherwise the salad will be watery) and place in a bowl. For the dressing, squeeze the lemon and whisk the juice with a little olive oil and a dash of balsamic vinegar. Season with pepper and salt, mince the garlic clove, and add it. Pour over the vegetables, mix well, and let stand for 30 minutes. Sprinkle with parsley and serve.
