Ingredients for 2 servings:
- 2 chicken breast fillets
- 6 slices of ham
- 4 sprigs sage
- 2 onions, white
- 1 can tomatoes, chopped
- 1 tsp oregano, dried
- 1 tsp thyme, dried
- 50 ml vegetable stock
- 80 g Parmesan
- 2 tbsp olive oil
- salt and pepper
- toothpick
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 5 minutes
with sage and ham
Wash the sage, spin it dry, and pluck the leaves from the stalks. Peel and trim the onions, and roughly dice them. Remove the rind from the Parmesan cheese and finely grate or shave it. Rinse the chicken, pat it dry, and season with salt and pepper. Then cover with a few sage leaves, wrap each slice of ham in two slices, and secure them with toothpicks. Heat the olive oil in a pan, sear the chicken briefly, turning occasionally, and then remove. Add the onions to the hot frying fat and fry until translucent. Add the tomatoes, stock, oregano, and thyme, bring to a boil, and season with salt and pepper. Transfer the sauce to an ovenproof dish, place the chicken in it, and sprinkle with the cheese. Braise in a preheated oven at 200°C (top/bottom heat) for about 30 minutes. Arrange the chicken and sauce on plates, sprinkle with sage and mixed pepper, and serve immediately. Serve with fresh baguette.
