Savoy cabbage rolls with minced turkey and bacon strips

Ingredients for 4 servings:

  • 2 onions
  • 2 garlic cloves
  • 50 g butter
  • 500 g minced turkey
  • 1 tsp thyme, dried
  • 1 egg(s)
  • 50 g breadcrumbs
  • 1 tsp, heaped mustard, hot
  • e.g. salt and pepper
  • 8 savoy cabbage leaves
  • 8 slices of raw ham (farmer’s ham) or bacon
  • 150 ml broth

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 10 minutes

Peel and finely chop the onions and garlic, and sauté briefly in a pan with 25g of butter until translucent. Place the turkey mince in a bowl. Season with the thyme, egg, breadcrumbs, mustard, onions, garlic, salt, and pepper, and knead into a smooth dough. Preheat the oven to 180°C (fan oven). Blanch the savoy cabbage leaves in boiling salted water for about 3 minutes. Remove, dip briefly in cold water, and let drain. Lay the leaves on a board, remove the hard middle leaf rib. Place 2 tablespoons of turkey mince on each leaf. Roll up tightly and wrap with a slice of farmer’s ham or bacon. Place in a dish, pour on the hot stock, and dot with the remaining butter in small pieces. Braise in the preheated oven on the middle rack for about 30 minutes. Serve the finished savoy cabbage rolls with a little stock. Serve with mashed potatoes and creamed savoy cabbage, for example.
