Ingredients for 4 servings:
- 250 g pasta, green
- 1 bell pepper(s), red
- 250 g cooked ham
- 70 g salami
- 1 large gherkin(s)
- 1 lemon(s), the juice
- 2 tbsp oil
- salt and pepper
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes
Add pasta to salted, boiling water, stir, and cook for 10 minutes until al dente. Rinse with cold water and let cool. Wash the bell pepper, halve, deseed, and cut into thin strips. Cut the ham, salami, and cucumber into thin strips. Mix everything together. Mix a marinade of lemon juice, oil, salt, and pepper. Pour over the pasta mixture, toss to combine, and let stand for two hours. A light dinner with crusty baguette bread.
