Zucchini stuffed with minced meat

Ingredients for 2 servings:

  • 4 yellow zucchini, approx. 20 cm
  • 400 g Hackepeter (seasoned minced meat)
  • 150 ml meat broth
  • 1 tbsp onion(s), dried
  • 1 tsp garlic, dried
  • 1 tbsp dill, dried
  • 2 tbsp olive oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 1 hour 25 minutes

Trim the ends of the zucchini, then halve the zucchini to create two 10 cm pieces. Use an apple corer to remove the cores and enlarge the hole slightly. Mix the zucchini core with the broth, garlic, onion, and dill and heat in a heavy saucepan. Fill the zucchini with the minced meat and add to the pan. Cover and simmer over low heat for about 1 hour. Turn the zucchini occasionally. Use a skewer to check if the zucchini is cooked to your desired degree. Drizzle with olive oil before serving.
