Baked onions

Ingredients for 4 servings:

  • 8 large onions, or 4 vegetable onions
  • 8 slices of bacon (breakfast bacon)
  • ½ bunch rosemary or other herbs
  • 8 tbsp cream
  • 200 g Parmesan, grated
  • 2 cloves garlic

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel the onions without cutting off the roots or stems. Simmer in salted water for 15 minutes, cut off the top, carefully hollow out the meat, wrap the onion in bacon, securing it with a toothpick if necessary. Chop the insides, mince the garlic, and fry both in a little oil. Add the rosemary, pour in the cream, fold in the Parmesan cheese, and reserve some of the cheese. Stuff the mixture into the onions, sprinkle with the remaining cheese, place in a baking dish, and bake at 200°C for about 30 minutes. It goes perfectly with grilled meat.
