Baked tomatoes with feta cheese

Ingredients for 4 servings:

  • 500 g tomatoes
  • 3 tbsp olive oil
  • 1 onion(s)
  • 1 garlic clove(s)
  • herbal salt
  • pepper
  • 200 g sheep’s cheese
  • Berries (pink pepper berries)
  • thyme for garnishing

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat the oven to 200 degrees Celsius. Wash the tomatoes and cut the tops off each one. Scrape out the seeds and flesh, roughly chop, and set aside. Cut straight across the bottom of the tomatoes and place them in a baking dish greased with 2 tablespoons of oil. Peel and finely chop the onion and garlic, and fry both briefly in 1 tablespoon of oil. Stir in the chopped tomato flesh, season with salt and pepper. Finely dice the cheese and add. Stuff the tomatoes with the mixture and season with herb salt, pepper, and red pepper. Bake on the middle rack for about 20 minutes. Garnish with thyme, if desired. I serve this with baked potatoes, steak, and garlic dip.
