Ingredients for 4 servings:
- 2 eggs
- 60 g sugar
- 2 tbsp vanilla sugar
- 400 g quark (low-fat quark)
- 4 tbsp orange juice
- 400 g red currants
- Hazelnuts (brittle)
- Lemon balm leaves
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Separate the egg. Beat the egg yolks, sugar, and vanilla sugar until thick and frothy. Fold in the quark and orange juice. Beat the egg whites until stiff and fold into the cream. Set aside 4 currant vines. Strip the remaining stems and place them in 4 bowls. Spread the cream on top (best with a piping bag). Garnish with the currant vines, hazelnut brittle, and lemon balm leaves.
