Ingredients for 4 servings:
- 450 g peas, frozen
- 1 onion(s)
- 40 g butter
- 100 ml vegetable stock
- 5 tbsp whipped cream
- 1 bunch of mint
- 1 ½ tbsp lemon juice
- Nutmeg, grated
- salt and pepper
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes
Peel and dice the onion. Melt the butter and sauté the diced onion until translucent. Add the peas, sauté briefly, and then pour in the stock. Reduce the heat, cover, and simmer over medium heat for 10 minutes. Wash and finely chop the mint. Add the cream to the peas, then blend everything in the stock until smooth. Season to taste with salt, pepper, nutmeg, lemon juice, and mint. Delicious with roast lamb.
