Waldviertler coconut slices

Ingredients for 8 servings:

  • 450 g spelt flour
  • 1 tbsp baking powder
  • 180 g butter
  • 150 g powdered sugar
  • vanilla sugar
  • rum
  • 2 small eggs
  • Jam (redcurrant jam)
  • 4 eggs, of which the egg whites
  • 200 g powdered sugar
  • 200 g desiccated coconut

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Knead spelt flour, baking powder, butter, 150g icing sugar, vanilla sugar, rum, and eggs into a dough. Roll out on a baking sheet and spread with jam. Beat egg whites and 200g icing sugar and fold in desiccated coconut; spread the mixture over the dough. Bake in a preheated oven at 170°C for approximately 25-30 minutes. Cut while hot and dip the underside in chocolate. The Waldviertel region is located in northwest Lower Austria on the border with the Czech Republic.
