Ingredients for 1 servings:
- 190 g butter, room temperature
- 9 egg yolks
- 9 protein
- 250 g sugar
- 400 ml cream
- 300 g flour
- oil
- possibly rum
- possibly orange juice

makes about 20 pieces
Beat the egg yolks with the butter until fluffy, add about half of the sugar, and continue beating for about 2 minutes. Beat the egg whites with the remaining sugar until stiff peaks form. Stir the cream into the egg custard, sift the flour into the custard, and carefully fold in the stiff peaks. If desired, add two tablespoons of rum or orange juice. Heat the waffle iron, brush with oil, and bake until golden brown. Brush with oil every third or fourth waffle to prevent sticking. Serve immediately after baking. Serving suggestions: powdered sugar, whipped cream, compote, ice cream, or fresh fruit.
