Irish leek and potato soup

Ingredients for 4 servings:

  • 2 leeks, cut into rings
  • 750 g potatoes, diced
  • 3 onions, finely diced
  • 500 ml vegetable stock
  • 500 ml milk
  • 3 tbsp oat flakes
  • 2 cloves garlic, crushed
  • salt and pepper
  • some chives for sprinkling
  • nutmeg

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Sauté the onion pieces and leek rings. Add the potato cubes and fry until golden brown. Stir in the oatmeal and cook for about 1 minute. Add the garlic. Stir in the broth and milk and let everything simmer for about 30 minutes. Season, and you’re done!
