Ingredients for 2 servings:
- 350 g broccoli
- 60 g breadcrumbs
- 70 g Cheddar cheese, grated
- 1 egg(s)
- 25 g spring onions
- 2 garlic cloves
- Salt
- 1 shot of Tabasco, optional
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 18 minutes; Total time approx. 48 minutes
Bring a large pot of salted water to a boil and cook the broccoli for 2 minutes. Drain the broccoli, then chop finely and place it in a large bowl. Whisk the egg and pour it over the broccoli mixture. Finely chop the spring onions and garlic cloves, add them to the bowl, and add the cheddar cheese and breadcrumbs. Let the mixture cool slightly, season to taste, and knead well. You can add a dash of Tabasco, if desired. Then form small mounds/balls and spread them evenly on a baking sheet. Bake the nuggets in a preheated oven at 200°C for 16-18 minutes, turning halfway through.
